- 1 Pochon loaf
- 1 cooked lobster
- 30 g of finely diced mango
- 30 g of finely diced red pepper, skinned
- 30 g of finely diced celery
- 50 g assortment of young salad leaves
- 50 g assortment of young herbs
- 150 g of fresh Alaska crab meat
- Lobster mayonnaise
- Lobster oil
- Sherry vinegar
Preparation steps
- Cut a slice in the Pochon loaf.
- Fry one side of the slice of bread with lobster butter.
- Mix the diced fruit and vegetables with the crab meat and 2 soup spoons of lobster mayonnaise.
- Put the diced mix on the fried side of the bread.
- Cut the lobster into slices and arrange on the slice of bread.
- Add the salad and herb assortments, previously drizzled with oil and vinegar, to the head and tail of the lobster.
- Decorate with micro shoots of Ruby radish and dark opal basil and a few cubes of fresh mango.
